Crispy Parmesan Almond Crusted Chicken with Edamame Pasta


Looking for a lighter and healthier version of Italian food? You've got it! This parmesan almond crusted chicken is simply delicious! I got to FINALLY whip out my new air fryer and it did not disappoint! This chicken is crispy on outside bursting with flavor and juicy on the inside! You could have these tenders dipped with condiments OR if you want to take it a step further, whip out some pasta to make it into a tasty macro nutrient friendly meal.


Here I used an edamame pasta that is extremely high in protein and low carb! The pasta has a pretty green color to it, and what would make most question just made me want to try it! I would highly recommend this brand Explore Cuisine. They have other delicious pastas that are certified gluten free such as edamame, black bean and red lentil! All worth trying!


I hope you all enjoy this recipe as much as I did! It didn't last very long in our household as most foods that are delicious don't!


 

Almond Parmesan Crusted Chicken

Ingredients:

  • 2 lbs chicken tenders or chicken filets cut into tenders

  • 1 cup Almond Flour

  • 1/2 cup Parmesan Cheese

  • 1 tsp. Garlic Powder

  • 1 tsp. Onion Powder

  • 1 tsp Italian seasoning

  • 1 tsp. Paprika

  • 2 tsp. salt

  • 1 tsp. pepper


Directions:

  1. Salt and pepper the outside of the chicken and set aside.

  2. Mix the egg up into a large dish.

  3. In another dish mix together almond flour, parmesan cheese, and spices.

  4. Dip the chicken in the egg and then the almond flour mixture.

  5. Preheat your air fryer to 400 degrees.

  6. Spray the air fryer basket with avocado or coconut oil spray. Add the chicken making sure not to stack the tenders on top of each other. (This will increase chances of the chicken not getting that super crisp outside like we want!)

  7. Air fry for 16-18 minutes. Flip it halfway through cooking.

  8. Repeat this process until all the tenders are cooked!

  9. Stack on top of pasta with your favorite sauce and top with parmesan or enjoy as is with your favorite condiment! Enjoy!!
