Healthy Delicious Chicken Salad

This recipe takes a basic cold sandwich to a whole different level! This chicken salad isn’t just your average, basic chicken salad☝🏼 It’s filled with crunchy, fresh, and colorful veggies, fruit and wholesome ingredients! From the grapes, to the almonds and fresh dill, every bite has a fresh and delicious flavor! This recipe makes a large amount and can be enjoyed in so many ways. Serve it on a salad, in a whole wheat wrap, or on bread for a tasty sandwich. Either way, your chicken salad recipe just got upgraded and you won’t ever want to go back!



• 4 lbs chicken breast or 4 cups, cooked and chopped (rotisserie chicken without

the skin is fine too!)

• 2 tbsp olive oil

• 1 cup red seedless grapes, halved OR 1 cup chopped honey crisp apples

• 1 cup almonds, thinly sliced

• 2 celery ribs, chopped

• 3 scallions, thinly sliced (white and green parts)

• 2 tbsp fresh dill, chopped

• 1 tbsp fresh parsley, chopped

• 1/2 cup low fat mayonnaise

• 1/2 cup greek nonfat yogurt

• Juice of 1 lemon

• 1 tbsp Dijon mustard

• 2 tsp Kosher salt (add more to taste)

• Freshly ground pepper


1. In a large bowl, mix together the chicken, grapes, almonds, celery, scallions, dill,

& parsley.

2. In a smaller bowl, mix together the mayo, lemon, mustard, salt and pepper.

3. Add the greek yogurt/mayo/mustard mixture to the chicken mixture and gently

stir until well mixed. Add more salt to taste.

4. Cover with plastic wrap and refrigerate for at least an hour.

5. Serve on a bed of greens with sliced tomatoes and avocado (my favorite!). Or,

serve on wheat bread with green leaf lettuce and fruit to pair. Enjoy!
