Healthy Flourless Protein Cookies


Don't bash them until you've tried them!!! These cookies are actually a dream. Not only are they great for pre or post workout fuel BUT I've also incorporated protein in them for replenishment. I love having a sweet that contains all 3 macros: healthy carb, fat and protein. The carbs come from oats, healthy fat from either peanut or almond butter and protein from a hint of protein powder.


You absolutely do not have to add the chocolate chips if you are watching your sugar, in fact I made a batch without them and they tasted just as wonderful! These cookies do best when refrigerated and remind me of a healthy bar but in cookie shape :) I hope you enjoy them as much as I do!


 

Ingredients:

  • 1 cup natural creamy peanut butter or almond butter

  • 2/3 cup brown coconut sugar

  • 2 teaspoons vanilla extract

  • 2 large eggs

  • 1 scoop vanilla protein powder (I use @designer protein)

  • 3/4 cup rolled oats (NOT the instant oats)

  • 1/2 teaspoon baking soda

  • 2/3 cup chocolate chips if desired

Directions:

  1. Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.

  2. In small bowl mix together the oats and baking soda; set aside

  3. In a large bowl mix together either the almond butter or peanut butter, coconut sugar, vanilla and eggs until smooth. Mix in dry ingredients with a wooden spoon, then gently fold in chocolate chips. (Try not to eat that batter haha!!)

  4. Roll cookies into 2-inch dough balls and place 2 inches apart on the prepared baking sheet. The dough will be a bit sticky, and I find that wetting my hands with water beforehand helps shape the dough balls!

  5. Bake cookies for 9-12 minutes and remove when edges barely begin to turn a golden brown. The cookies may look a little underdone, but they will continue to cook once you remove them from the oven.

  6. Cool for 10 minutes on the cookie sheet. Have some warm, and refrigerate the rest!
