Healthy Flourless Protein Cookies

Don't bash them until you've tried them!!! These cookies are actually a dream. Not only are they great for pre or post workout fuel BUT I've also incorporated protein in them for replenishment. I love having a sweet that contains all 3 macros: healthy carb, fat and protein. The carbs come from oats, healthy fat from either peanut or almond butter and protein from a hint of protein powder.
You absolutely do not have to add the chocolate chips if you are watching your sugar, in fact I made a batch without them and they tasted just as wonderful! These cookies do best when refrigerated and remind me of a healthy bar but in cookie shape :) I hope you enjoy them as much as I do!
Ingredients:
1 cup natural creamy peanut butter or almond butter
2/3 cup brown coconut sugar
2 teaspoons vanilla extract
2 large eggs
1 scoop vanilla protein powder (I use @designer protein)
3/4 cup rolled oats (NOT the instant oats)
1/2 teaspoon baking soda
2/3 cup chocolate chips if desired
Directions:
Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
In small bowl mix together the oats and baking soda; set aside
In a large bowl mix together either the almond butter or peanut butter, coconut sugar, vanilla and eggs until smooth. Mix in dry ingredients with a wooden spoon, then gently fold in chocolate chips. (Try not to eat that batter haha!!)
Roll cookies into 2-inch dough balls and place 2 inches apart on the prepared baking sheet. The dough will be a bit sticky, and I find that wetting my hands with water beforehand helps shape the dough balls!
Bake cookies for 9-12 minutes and remove when edges barely begin to turn a golden brown. The cookies may look a little underdone, but they will continue to cook once you remove them from the oven.
Cool for 10 minutes on the cookie sheet. Have some warm, and refrigerate the rest!
