Meal Prep Tasty Beef Meatballs!





These meatballs have been a LIFESAVER recently! What can I say it's been one heck of a busy month, as I'm sure it has been for all of you! These are incredible with either beef, ground turkey or ground chicken and can be added over rice, cauliflower rice, or a bed of veggies. Sometimes when your in a rush, all that you can do is throw something quick together, and alot of it! I love meatballs for meal prep because it doesn't take long and they taste SO good!


If your in a rush and don't have time for roasted veggies or making rice- my favorite way to eat quick these days is throwing a 90 min quick rice in the microwave and microwaveable veggies to cut down on time. Done and done :) Hope you enjoy these as much as I have!


 

Ingredients:

  • 1 lb ground beef (95/5) or ground turkey (94/6)

  • 1/2 cup chopped, diced onion

  • 1/4 cup dried bread crumbs, regular or gluten-free

  • 2 garlic cloves, minced

  • 1 egg

  • 1/4 cup parmesan cheese, finely grated

  • 3 Tbsp Ketchup

  • 1 tbsp salt

  • 1/4 tsp pepper

  • 1 tsp onion powder

  • 1 tsp garlic powder

  • 1 Tbsp parsley, minced (or about 1/2 Tbsp dried)


Directions:

  1. Pre-heat oven to 400 degrees F. Spray a large cookie sheet with cooking spray.

  2. Mix together onion, bread crumbs, garlic, egg, cheese, ketchup, salt, pepper, onion powder, garlic powder, and parsley in a large mixing bowl.

  3. Add in ground beef and mix gently until combined. Do not overwork. Form into 1-inch balls and place on prepared cookie sheet.

  4. Bake in preheated oven for 15-20 minutes, or until meatballs are browned and cooked through.
