Teriyaki Salmon Bites Vibrant Rice Bowl



2023 has been off to such a great start!! Aside from being bed ridden from the flu last week- I've been feeling SO inspired to put together vibrant and healthy bowls, salads and more! It's inspiring to start off a New Year with not only feeling good physically but also mentally and emotionally too! One thing about vibrant foods, is that we KNOW it's going to give so mnay essential vitamins and minerals to help you feel energized, happy and fueled!


This bowl was so delicious, and I was pleasantly surprised by how crispy and tasty the salmon bites were! BIG note right here, is to make sure the salmon bites are separated and not stacked when air frying them! And the lighter and tastier version of a regular mayo sauce is spectacular! I loved making a big bulk of this and packing it up for meal prep. For the salmon, I only eat this for a couple of days BUT you can additionally air fry chicken to last for a few extra days! Nobody likes week old fish anyways... yuck! But having the salmon fresh is AMAZING. Enjoy y'all, this one hit a home run!


 

Ingredients:

  • 2 filets salmon, I love wild caught for a fresher taste!

  • 3 tablespoons coconut aminos

  • 1 teaspoon sesame oil

  • 1 tablespoon honey

  • ½ teaspoon garlic powder

  • ½ teaspoon sea salt


Lighter spicy yogurt sauce:

  • ¼ cup plain nonfat yogurt

  • 1 teaspoon sriracha, plus more if you like spicy!

  • ½ teaspoon chipotle powder

  • ½ teaspoon paprika

  • 1 teaspoon olive oil


For the rice bowls

  • 2 cups cooked brown rice

  • ½ cup cooked edamame

  • ½ sliced avocado

Garnish

  • More sesame seeds

  • Cilantro, chopped

  • Chopped green onion


Directions:

  1. Pat your salmon filets dry with a paper towel. Use a sharp knife to cut the skin off the filet if needed. Then cut the salmon filets into 2 inch cubes.

  2. Place the salmon cubes in a small bowl and add the coconut aminos, sesame oil, honey, garlic powder, and sea salt. Gently toss the salmon in the marinade mixture and let the salmon marinade for 15 min in the fridge to soak in the flavor!

  3. Place the marinated salmon in the bottom of an air fryer basket, leaving space in between each one. Save the leftover marinade so you can drizzle it over the cooked salmon later. Cook the salmon at 400 F for 7 minutes in the air fryer. The edges of each cube will get crispy and the teriyaki sauce will caramelize.

  4. While the salmon is cooking, prepare the spicy yogurt sauce in a small bowl by mixing together the yogurt, hot sauce, chipotle powder, paprika, and olive oil with a spoon until well combined.

  5. To assemble the bowls, place 1/2 cup of cooked brown rice into the bottom of a bowl. Spoon a few of the fried salmon bites over top followed by a handful of edamame in a section of the bowl and a few avocado slices in another. Spoon some of the leftover marinade over top of the salmon bites and then drizzle the whole bowl with some spicy yogurt sauce! IF you want to be extra, garnish with green onion, cilantro and sesame seeds and enjoy!
